Opting out
Turn off Settings → Share play data to stop sending to Google Analytics for Firebase and Firebase Crashlytics. Remote Config keeps running, because the game uses it to receive its settings. Google Mobile Ads' use of the advertising identifier can be stopped in iPhone Settings → Privacy & Security → Tracking; whether to watch a reward video is always your choice.
